My Favorite Recipes: Easy Crock Pot Chili
Well, Fall is here, and with the colder weather comes a change in our dinner time routine. Partly because I like the familiarity, and comfort of it, and partly because crock pot meals are just so darn easy. And we had our first official cold snap this week, along with a few inches of snow. Which means it’s chili weather! Time for me to bring out my Crock Pot and make some chili!
And while I don’t have very many ‘people’ recipes on my blog, I thought I would switch things up a bit and share some of my favorite (and easy) recipes with you.
I am willing to be you probably already have a chili recipe, but if you are looking to try a different one, or have never made your own chili before, here you go!
Easy Crock Pot Chili
This chili is best if you put it in a crock pot on the low setting and allow it to cook for about 8 hours
- 2 lb ground beef cooked and drained (Or you could use meatless crumbles if you prefer a vegan alternative)
- 1 cup of water
- 2 cans black beans
- 2 cans dark red kidney beans
- 1 large can chili beans
- 1 large can diced tomatoes with green chilies
- 1 Tablespoon minced garlic
- ½ cup chopped sweet onions
- 2 packages chili mix (I prefer the Wal-Mart Great Value brand myself)
Brown your ground beef, and make sure it’s completely cooked, no pink meat! Drain the grease and set aside in a bowl.
Open all of your cans and dump them into the crock pot, liquid and all, and add in 1 cup of water.
Add in the minced garlic, and then chop the sweet onion, and add it to the crock pot too.
Open the packages of the chili mix and add to the crock pot.
Add in your cooked ground beef (hamburger) and gently stir so all the ingredients are mixed together.
Put on the cover, and make sure your crock pot is plugged in. Then turn it to the low setting and allow your chili to cook on low for about 8 hours.
This is a perfect dinner recipe to start before you leave for work in the morning. Then when you get home, you will be greeted with the incredible smell of dinner as soon as you open the door. I love that! So welcoming!

I love crock pot meals during the winter. They are easy, and time saving meals. This will give you a few extra minutes out in the barn with your horses, because dinner is already done!
To complete this meal, I will usually make some Jiffy brand corn bread muffins. I don’t know why, but the Jiffy corn muffin mix is my favorite. I have tried all of the other brands, and even made homemade corn bread. But I always go back to Jiffy.
This corn muffin mix is so easy. And 1 package makes 6 muffins, which is just enough for my husband and I. They also go great with a little bit of butter and honey.
The chili is nice and warm, and filling for a cold winter night, and this recipe makes enough for a large family. Or, if you are like us and there are only 2 of you (or 1) the leftovers easily freeze, and then you can have chili another night. Or, do what we do, and have chili dogs! I know, not the healthiest of dinners. But hey, occasionally a chili dog is yummy.
You Should Have A Crock Pot
If you don’t have a crock pot in your kitchen, they are a really affordable tool for your kitchen. And they last forever. We have a large one because at one time, we had a large family. But just because our kids left, doesn’t mean we need a new crock pot.
When I cook meals with the crock pot, I usually just freeze the left overs to use for another meal in the future.
